When to Harvest Walnuts: Timing and Signs of Maturity
There is no single harvest date for every walnut orchard. Variety, seasonal conditions and kernel maturity must be considered together. Hull splitting is a useful clue, but waiting for it alone can be misleading in hot, dry conditions.

Why does the harvest date change?
As autumn approaches, asking when walnuts are picked means asking about the orchard as well as the product. Kahramanmaraş’s provincial agriculture directorate identifies variety, climate, annual rainfall, temperature and elevation as factors affecting harvest timing. [1]
Treat last year’s date as a planning note rather than an appointment that the trees must keep. Record the current season separately. Harvest starting in a neighbouring orchard does not establish that every tree in your own orchard is ready on the same day.
Distinguish the hull from kernel maturity
The green outer hull, hard shell and edible kernel are different structures. UC IPM describes browning of the tissue around the kernel as a maturity indicator; hull separation can follow later. [2]
Examine samples from different trees instead of deciding from a few fallen nuts. Note the tree and inspection date so one sample does not stand in for the whole orchard. For a commercial harvest decision, assess the samples with a local agricultural adviser who understands the growing conditions.
Plan the work before picking begins
Prepare collection containers, transport and a sorting area before starting. Do not plan solely around the quantity you can bring off the trees. Also consider how much can move through hulling and into drying that day, and where the next step could become a bottleneck.
Keep the collection date, tree group and destination together in your records. If rain interrupts work, record the later collection separately. Does a new crop mean a dried product?
New crop describes a harvest period; it does not, by itself, say that processing is finished. Ask about the harvest year and whether the order will contain dried in-shell walnuts. Do not treat a weight quoted for freshly harvested nuts as equivalent to the same weight of dried product.
Write down the variety, harvest year, product condition and pack weight in the same order note. Those details make later conversations clearer. A seasonal headline or the date of a harvest photograph on social media does not establish the condition of the batch that will actually be shipped.
